José Júlio Mendes Vintém was born in Portalegre in 1972. In 2002 he opened his restaurant “Tomba Lobos”.

José Júlio Vintém's main objective has always been to invest in local organic products, always respecting seasonality, as well as to recover delicacies and regional recipes, in order to build a menu that would contribute to the promotion and perpetuation of the gastronomy of the Alto Alentejo.

His cuisine is characterized by pure flavours, simple techniques where the Texture, Aromas and Flavors of the food are maximized.

The gastronomic richness of the region, as well as its fantastic recipes, are what stimulate the creation and confection of new dishes. As a compulsive researcher of forgotten products, he visits every market he can in the name of a cuisine that he considers authentic and affirms its Portuguese roots. The challenge will be to cook and recreate Alentejo Recipes with native products and manage to blend Flavors and Aromas in a harmonious way.

At the moment, in addition to the TombaLobos Restaurant, there are also Tombalobos canned: traditional snacks made in the restaurant.
